A fragrant autumn course. The season for gourmet food begins with the opening of the season for spiny lobster.

Starting this month, our main dining room, Fuga, will be serving an autumn menu.
This is Fujii's full-fledged debut dish, having been appointed executive chef this summer.

What Fujii values ​​is the aroma and power of the ingredients.
We cook every day surrounded by the freshest, highest quality ingredients that are easily available only in Atami.

The Ise lobster fishing season in Izu opened on September 9th.
Bouillabaisse, which Fujii is trying to develop as a signature dish of Fuga, is an ingenious and creative dish based on the rich flavor of infused spiny lobster extract, with a touch of autumn freshness reminiscent of the brightness of the south of France.
The standard and upgrade courses begin with a citrus-infused essence of Izu, while the special bouillabaisse course includes a half-body spiny lobster served in a hot pot for each person, marking the climax of the course.
