
Shizuoka Onkochi Shinto Story: Chapter 1 Pairing fresh Shizuoka caviar with local sake
This winter, Hotel GrandBach Atami Crescendo will be proposing a new pairing of caviar and local sake, which will be available in the hotel restaurants from December 12st.
Additionally, from New Year's Day through January 1th, and on any Saturday in January, guests staying at the hotel will be able to sample the drinks during lounge time at the Library Bar, Magdalena.
Both the caviar and sake are top-quality products produced in Shizuoka Prefecture.
The prefecture's caviar originates from the southernmost tip of the Southern Alps.
The appeal of "HAL CAVIAR" lies in its purity, freshness and lack of impurities. It is made from carefully raised sturgeon, whose source is water from the mountains that is so pure and mineral-rich that it is called "miracle water."
Both Ida, the former executive chef and current general manager who discovered this, and Fujii, the current executive chef, are amazed, saying, "This is in a class of its own."
With the cooperation of the manufacturer, the hotel has created its own original caviar. From among the many salts available, Fujii chose Heda Salt from Nishiizu. After studying the salt ratio and aging period, he determined the peak of deliciousness and created Shizuoka Caviar.
Sommelier Fujie says, "If you are going to pair the pure, refined flavor of caviar with alcohol, it's better to choose something with a rich ginjo aroma rather than something with a fruity flavor."
Originally a chef, what struck his palate was the product of Hananomai Sake Brewery, which also makes sake using water from the Southern Alps, and is located not far from the caviar production area.
A set of two types of sake and rice shochu will give you a fun time to compare the flavors and taste the subtleties of their compatibility. If you combine it with the aforementioned caviar, it may be an experience that will surprise you, open the door to a new dimension of taste.
