We have put together a selection of high-quality dishes that will brighten up the end of the year and are perfect for enjoying with dinner at our hotel.
■ Taittinger Prelude
The champagne named after Prelude is a special cuvée made by the historic champagne maker, Taittinger.
A blend of half Chardonnay and half Pinot Noir from the highest level Grand Cru vineyards, the wine has a refreshing white flower aroma and the spiciness of cinnamon and ginger, giving it a deeper aroma. It has flavors of green apple, citrus, and white peach puree, and its long aftertaste and powerful finish add a touch of elegance to the start of a gourmet meal.
■Domaine du Pegau Chateauneuf du Pape Cuvee d'Acapo
Cuvee Da Capo is a red wine produced by Domaine Du Pegau, which is said to produce the best Chateauneuf de Pape in the Southern Rhone region, and is only produced in vintages with good weather, making it extremely rare.
The aroma of ripe black fruits such as plums and blackberries is intricately intertwined with elements of black pepper, licorice and cinnamon, giving it a rich yet luxurious scent reminiscent of the sun in the south of France. The thick, smooth and deep tannins leave a long aftertaste.
■Opus One
Opus One is a wine that is extremely well-known among wine lovers. It is a collaboration between Chateau Mouton Rothschild, one of the five great chateaux of Bordeaux wine in France, and Robert Mondavi, the father of California wine.
It has an elegant style, with fresh red fruit tones, followed by small black fruit such as blackcurrant and blueberry, accented with brown spices such as cloves and cinnamon, and gently wrapped in vanilla and cocoa. It is a very well-balanced wine with a thick and firm texture, but with a fresh and elegant acidity and fine, generous tannins.
■ Overture
Overture, meaning prelude, is the second wine of Opus One. Since the production volume is small and it is not produced every year, one of its characteristics is that the production year is not disclosed.
■ Taittinger Nocturne Three-Verse Sec Rose
Nocturne is another wine named after a musical instrument, created by the art-loving Taittinger family.
As the name Nocturne suggests, this champagne is perfect for enjoying slowly with dessert after a meal, and its gentle sweetness makes it a great choice for those who don't usually drink champagne.
