■ Cocktail name: "THE CONNECTION"
This cocktail was born when Hotel GrandBach's head bartender, Tsukasa Takahashi, discovered the strange connection between these two geniuses. J.S. Bach, the "Father of Music" for whom the hotel is named, passed away in Leipzig, Germany, in 1750, leaving behind over 1000 masterpieces. Tsutaya Juzaburo, whose life is depicted in the TV drama "Berabou" and who built the flourishing free art publishing culture of the Edo period, was also born in 1750. The two creators lived in the same period, the first and second half of the 18th century. Coincidentally, the current location of Hotel GrandBach Tokyo Ginza is located on the southwest corner of the residence of Tanuma Okitsugu, with whom Tsutaya Juzaburo was also close friends during the Edo period, and is known as the former site of the Kano School Art School.
Drawing inspiration from these intersecting coincidences (i.e., connections), a two-layered cocktail was created, evoking the encounter between Japanese and Western cultures, with matcha, now beloved worldwide, playing a central role in the recipe. The deep evergreen top layer is made with "CUZEN MATCHA," made from organic tea leaves. Enjoy the aroma and vibrant flavor of freshly ground matcha, a flavor rarely found in other drinks. Layered with protein from Seitenbach, a long-established German natural foods manufacturer, it creates a refined and unique harmony. The rose-colored bottom layer is made with Kyoto Distillery's prestige Japanese gin, "Ki No Bi Kyoto Dry Gin," and plum liqueur, "Ki No Ume." These natural Japanese ingredients echo the natural aesthetic sensibilities of the Kano school, which originated in Kyoto. The final piece, a floating wafer paper, depicts Kano Sansetsu's masterpiece "Old Plum Blossoms," housed in the Metropolitan Museum of Art, and the plum tree, a symbol of rebirth, appears as if to hint at the connection between Bach and Juzaburo.

In 2014, it won first place in the Nikka Whisky Forum Cocktail Competition, and since then, Japan Bartenders AssociationHe has won numerous awards in competitions he has hosted, including being selected as a Japan Finalist at the 2018 Hennessy Cocktail Competition and as a finalist in the Japan Final at the Ron Sakapalam Competition.
Since 2021, he has been working as head bartender at Hotel GrandBach Tokyo Ginza.
