Menu information for summer 2023

Hotel GrandBach Tokyo Ginza, which has a wellness cuisine concept, has started offering a summer menu at its first floor restaurant, Wald Haus -Mori no Ie-.

The "Wellness Course" created by Chef Sadaharu Kitajima and Wellness Food Concierge Ruriko Oshima is available for lunch and dinner, as well as the French-style "Premium Course" where you can savour the luxury of domestic ingredients, which is available by reservation only. In addition, the à la carte menu at dinnertime includes a menu that pays homage to J.S. Bach, dishes and desserts recommended by the chef that are not limited to French techniques but also focus on Japanese fermentation culture, and vegetarian dishes recommended by the Wellness Food Concierge.

The summer menu will be available from Monday, May 5th to Monday, August 29th.
